As a New Yorker (and specifically a Long Islander), there is absolutely nothing that can rival an Everything Bagel with scallion cream cheese.
To my dismay, local bagel stores in my area tend to fall into the commercial grey area between “essential” Food Services and medium sized Mom & Pop “non-essential” Luncheonettes.
Needless to say .. my favorite bagel place is closed.
So, just like with burgers and chicken wings, I’ll use this shelter-in-place period to reinvent my all time favorite breakfast item — just on a smaller scale.
After developing this “recipe”, I could not believe that I had never served this as an hors d’oeuvre or appetizer.
Although this is the shortest — and simplest recipe you’ll ever read from me, it’s also one of the most addicting.
- 15–20 Plain Triscuits (or Small Crostini)
- Four Tablespoons of Scallion Cream Cheese
- Four Tablespoons of Chopped Scallions
- Four Tablespoons of Everything Bagel Seasoning
- Optional: Segments of Lox or Smoked Salmon
Smear each cracker or crostini with Scallion Cream Cheese.
Next, top with Everything Bagel Seasoning and medium segments of fresh scallions.
Optional: Add small to medium sliced segments of smoked fish, as well.
